Strawberry Balsamic Chicken

Posted in Gluten Free, and Homemaking

What do you do when you have lots of delicious, sweet, ripe strawberries? You start incorporating them into a variety of dishes. I had already planned on making boneless, skinless chicken breasts for dinner, so I decided to add some balsamic strawberries sweetened with honey as a punch of flavor. The result was really quite good. The next time, I plan on serving this over a bed of greens. Strawberry Balsamic Chicken Recipe Ingredients: 4 boneless, skinless chicken breasts Olive oil or butter Salt and pepper to taste 6 large strawberries 1 Tbsp. My New Dehydrator

Posted in Homemaking, and Homesteading

I was so excited when I was finally able to order a dehydrator as it’s something that I’ve been wanting for several years. Thanks to saving up Amazon gift cards (some from my Swagbucks* search as well as some that I’ve received for special occasions), I ordered the dehydrator a little over a week ago. The hardest part of cooking right now is the fact that I’m not eating dairy or sugar, and I’m limiting grains. Normally, I taste everything as I cook to make sure it’s properly seasoned and that the flavors are coming together. Right now,…

Mayo-free Chicken Salad in Tomato Cups

Posted in Gluten Free, and Homemaking

Right now, I’m trying to detox my body which means that I’m not eating sugar or dairy. I’m also eating very few grains. Because of this, I’m finding that I need more protein to keep me feeling good and not run down. I was in the mood for some chicken salad, but mayo is not an item I can use right now. I needed to come up with something else. I decided to use a healthy fat – olive oil, mustard, and a little vinegar. The mustard and honey give the chicken salad a tang, but it’s not overly strong.…
