What do you do when you have lots of delicious, sweet, ripe strawberries? You start incorporating them into a variety of dishes. I had already planned on making boneless, skinless chicken breasts for dinner, so I decided to add some balsamic strawberries sweetened with honey as a punch of flavor. The result was really quite good. The next time, I plan on serving this over a bed of greens.
Strawberry Balsamic Chicken Recipe
Ingredients:
- 4 boneless, skinless chicken breasts
- Olive oil or butter
- Salt and pepper to taste
- 6 large strawberries
- 1 Tbsp. Strawberry Balsamic Vinegar
- 1-2 tsp. honey
- Sprinkle of cinnamon
- Fresh greens (optional)
Directions:
- Preheat oven to 350 degrees F. Heat up cast iron skillet.
- Heat butter or olive oil in cast iron skillet over medium heat.
- Season chicken with salt and pepper on both sides.
- Cook chicken on each side for 2 minutes or until nicely browned. Place in oven and cook until internal temperature reaches 165 degrees F. Allow to rest for 5 minutes.
- While the chicken is cooking, slice up strawberries and place in a small bowl. Drizzle strawberry balsamic vinegar and honey over the strawberries and sprinkle with cinnamon. Stir to coat. Set aside.
- After chicken has rested, slice on the diagonal in 1/2 or so slices. If desired, place chicken strips on a bed of greens. Top with strawberries and drizzle with the vinegar/honey mixture.
