Right now, I’m trying to detox my body which means that I’m not eating sugar or dairy. I’m also eating very few grains. Because of this, I’m finding that I need more protein to keep me feeling good and not run down. I was in the mood for some chicken salad, but mayo is not an item I can use right now. I needed to come up with something else. I decided to use a healthy fat – olive oil, mustard, and a little vinegar. The mustard and honey give the chicken salad a tang, but it’s not overly strong. For my chicken salad, I did use infused oil and vinegar for an extra punch of flavor. Overall, I was pleased with the results. If you need a little more sweetness in the chicken salad, you could add a bit of honey. Tomatoes were the natural “holder” for the chicken salad as we received some beautiful tomatoes in our Bountiful Baskets order. Yum!
Mayo-free Chicken Salad in Tomato Cups Recipe
Ingredients:
- 1/4 cup olive oil
- 1 tsp vinegar
- 1 Tbsp mustard
- 1 tsp cumin
- 1 tsp parsley
- 1 tsp paprika
- 1/2 stalk celery, diced
- Roma tomatoes
- 2 cups shredded chicken
Directions:
- Whisk together the olive oil, vinegar, and mustard. Note on the vinegar, you may want to use a little more or less depending on your tastebuds.
- Combine mustard mixture with spices.
- Stir in celery and shredded chicken until chicken is coated with mustard/spice mixture.
- Remove seeds from tomatoes and fill with chicken salad.
- Serve immediately.
