Munchkin has really missed chicken nuggets, so I needed to find a fast, easy recipe to satisfy her craving… Ingredients:6 oz of your favorite tortilla chips (zesty is good for more flavor)1/2 C grated Parmesan cheese1 egg1 1/2 lbs of skinless, boneless chicken (cut into pieces) Directions: 1. Growing up, my mom would make us this delicious meal. She never had a recipe, so I had to go hunting for something that was similar to her recipe. With a little tweaking, I turned that recipe into a yummy gluten free treat.
