Baked Sweet Potatoes with Pecan Crumble

Posted in Gluten Free

I have a large bag of organic sweet potatoes that needed to be used up, so I thought I would make a healthier sweet potato casserole to use with dinner. When I ran short on time, I decided to jazz up the baked sweet potatoes with a pecan, coconut crumble rather than make the casserole. Normally, our family isn’t huge on sweet potatoes, but both Munchkin and D gave these baked sweet potatoes two thumbs up. I liked that they were not only easy to make but also healthier than a traditional sweet potato casserole all while tasting delicious. To prepare…

Flourless Smore Cookies

Fall is here which means I can turn on the oven without feeling like we’re roasting in the house. I decided to play around with my basic flourless peanut butter cookie recipe to create flourless smore cookies. I was craving the taste of smores. Since we couldn’t have an open fire and roast smores, this seemed like a good alternative. Cooler weather calls out for hot, fresh baked goods, and these tasty cookies are easy to make and delicious. They are gluten free and dairy-free. You can use sunbutter if you need a nut-free alternative. This recipe is kid-friendly and approved.…

Cilantro and Roasted Onion Sweet Potato Hash

When I received a bottle of Cilantro and Roasted Onion Olive Oil as a member of the Devo Diva team, I knew that I wanted to use it to make a sweet and savory sweet potato hash. I had two beautiful organic sweet potatoes sitting on the counter just waiting to be used. I also had some lovely organic bell peppers and sweet onions to add to the mix. Since I needed a quick meal that night, I decided to turn the sweet potato hash into Mexican sweet potato bowls and topped the hash with cheese, red sauce, and some…

For some reason, I was craving something pumpkin yesterday, so I decided to make some pumpkin muffins. Knowing that muffins make a quick and easy on-the-go breakfast, I went ahead and made a double batch, so I could freeze some for later. I like to freeze them individually, so we can just grab a muffin or two as needed. I thought it would be nice to try to make a healthier version of an old favorite. Of course, it would have worked a little better if I would have realized that I didn’t have any eggs. lol! I made them…

Omelet Muffins

Posted in Gluten Free, and Homemaking

Now that we’re heading over to the ranch in the morning on most days of the week, I find that we need something fast and easy for breakfast. Muffins are always a favorite, so I decided to make a twist on traditional muffins. The result was an omelet muffin that could be made ahead and stored in the fridge for approximately 3 days. The omelet muffins can be easily personalized for different tastes and/or food allergies. It’s also a good way to use up extra veggies and/or meat that’s in the fridge. This really is a throw together, use what…
