Grain Free Coconut Flour Tortillas

Our neighbor was looking for a recipe for grain free tortillas, so I decided to try to come up with something using coconut flour that would work. It doesn’t have that true tortilla feel as it has an egg base, but the flavor and texture work. It also rolls nicely as long as it is kept thin, but not too thin. What do you do when you have lots of delicious, sweet, ripe strawberries? You start incorporating them into a variety of dishes. I had already planned on making boneless, skinless chicken breasts for dinner, so I decided to add some balsamic strawberries sweetened with honey as a punch of flavor.
