It’s late morning on Saturday, and Munchkin is hungry. Knowing that I’m trying to eat dairy and grain-free right now, I wanted to create a dish that would fill us up without including the unwanted ingredients. Right now, I’m trying to detox my body which means that I’m not eating sugar or dairy. I’m also eating very few grains. Because of this, I’m finding that I need more protein to keep me feeling good and not run down. I was in the mood for some chicken salad, but mayo is not an item I can use right now. Our organic Bountiful Baskets order for 3/2/13 was filled with all kinds of goodies this week including Romanesco, Leaf Lettuce, Baby Broccoli, Cilantro, Celery, Red Potatoes, Red Swiss Chard, Bananas, Apples, Mangoes, Grapefruit, and Blueberries. Now, I’ve never cooked Romanesco, but I read that is was kind of like cauliflower, so I started throwing together a variety of items from the basket this week as well as a few leftovers from last week. We received a bunch of fresh, organic Brussels Sprouts in our Bountiful Baskets order on Saturday, so I needed to come up with a tasty way to use them. Me? I love Brussels Sprouts. Munchkin doesn’t like them at all. D pretty much only likes them when they are roasted, but he’s still not a huge fan.
