We have enjoyed this modified gluten free version of Sue Gregg’s blender batter cornbread. Ingredients: Stage One1 C buttermilk1/4 C olive oil or melted butter3 Tbsp honey2 C gluten free corn meal Stage Two2 eggs2 tsp gluten free baking powder1 tsp salt1/2 tsp cumin or cayenne pepper (optional, according to tastes) Directions: Place stage one ingredients in the blender (wet ingredients first) and blend until thoroughly combined. Growing up, my mom would make us this delicious meal. She never had a recipe, so I had to go hunting for something that was similar to her recipe. With a little tweaking, I turned that recipe into a yummy gluten free treat. Ingredients:3/4 C gluten free pancake mix1/2 tsp salt1 Tbsp sugar4 eggs3/4 C milk1/4 C butter4 medium to large apples (thinly sliced) Topping:1/3 C sugar1 tsp cinnamon Directions: 1. Ingredients: 2 C gluten free rice flour mix 1 tsp xanthan gum1 C sugar2 tsp baking powder1/2 tsp salt (mix together dry ingredients and set aside) 1 tsp vanilla extract1 Tbsp shortening, melted (or oil)3/4 C milk2 eggs (combine thoroughly) Directions: 1. Add dry ingredients into wet ingredients.2. Lightly spray donut trays with non-stick spray.3. Pour mixture into pans so they are about 3/4 filled4. These waffles use Sue Gregg’s Blender Waffle/Pancake batter as the base. Having most of the prep work done in the evening makes these waffles quick and easy in the morning. Munchkin has started back up with her home economics which means yummy good eats for us. One new thing that has been added to her studies is meal planning and nutrition.
