Dr. Lucy’s cookies are gluten free, peanut and tree nut free, milk free, and egg free.  Even though they are free of many allergens, they are not free from delicious flavor.  The cookies are made in a dedicated facility for your peace of mind – no cross contamination issues to worry about. We were given the opportunity to try the four varieties of Dr. Lucy’s cookies: chocolate chip, cinnamon thin, sugar, and oatmeal. Crispy Rice Baskets for Easter

These start off with the traditional recipe – 3 Tbsp butter, 1 package large marshmallows, and 6 cups rice cereal (I used gluten free Koala Crisp cereal – chocolate crispy rice). Prepare as usual – melt butter over low heat until melted, stir in marshmallows until completely melted, remove from heat and add cereal, stir until cereal is completely mixed in. Grease some muffin tins (I greased with coconut oil) and add cereal mixture.  Make a well in the top, so you can “fill” the basket. Gluten Free Fried Cheese Sticks Ingredients: Spring Roll Wrappers (make sure they are gluten free) Sticks of Cheese (I used mozzarella) Seasoning (if desired) Directions: Heat up oil to around 360 degrees (I use a deep fryer with palm shortening) Soak spring roll wrappers in water to soften. Cut cheese in sticks if not already cut. Place spring roll wrapper on plate and sprinkle with seasoning (if desired, I use oregano & garlic powder). Grapefruit & Prickly Pear Roast Chicken

Grapefruit & Prickly Pear Roast Chicken Ingredients: 3 large boneless, skinless chicken breasts 1/2 tsp minced garlic 2 Tbsp Prickly Pear sauce 1 large grapefruit, juiced Directions: Combine grapefruit juice, prickly pear sauce, and minced garlic. Place chicken breasts in a baking dish.  Pour sauce over chicken breasts. Cover with plastic wrap and refrigerate for a few hours. Place baking dish in oven and turn oven to 400 degrees F.  Bake for approximately 40-45 minutes or until internal temperature reaches 165 degrees F. This post is part of Gluten Free Wednesdays
