Roasted Cauliflower and Broccoli

Bountiful Baskets 7/7/12

Today, I picked up our Bountiful Baskets order, and I have to say that the organic baskets were wonderful this week. We received broccoli, cauliflower, cherries, mangoes, donut peaches, mushrooms, corn, purple kale, baby bok choy, celery, and cantaloupe. I also got a box of pineapple. The pineapple, mangoes, and peaches aren’t ripe yet, so that will give us a chance to really dig into all the other yummy fruits.

Because I really want to take advantage of all of the yummy goodies this week, I decided to make some roasted cauliflower and broccoli for lunch. It’s been some time since I’ve made it, so it was a bit of a trial run. It turned out well, and it was filling which is a plus.

Roasted Broccoli and Cauliflower

Ingredients:

  • 1 head of cauliflower
  • 2 heads of broccoli
  • 3-4 Tbsp. olive oil
  • salt
  • pepper
  • garlic powder
  • shredded Parmesan cheese

Directions:

  1. Preheat oven to 375 degrees.
  2. Break apart the cauliflower and broccoli heads (make sure you’ve washed them well) and place in a large baking dish.
  3. Drizzle cauliflower and broccoli with olive oil.
  4. Sprinkle with freshly ground sea salt and black pepper according to your taste.
  5. If you have fresh garlic, you can use it. I didn’t have any on hand, so I just sprinkled lightly with garlic powder.
  6. Bake for 25-30 minutes until veggies are fork tender.
  7. Remove from oven and sprinkle with Parmesan cheese.
  8. Serve immediately.

Ingredients
  • 1 Head of Cauliflower
  • 2 Head of Broccoli
  • 3-4 Tbsp. Olive Oil

  • Garlic (fresh or garlic powder)
  • Shredded Parmesan cheese
Instructions
  1. Preheat oven to 375 degrees F.
  2. Cut up cauliflower and broccoli (clean well) and place in large baking dish.
  3. Drizzle cauliflower and broccoli with olive oil.
  4. Sprinkle with freshly ground sea salt and black pepper according to your taste.
  5. Add diced garlic or garlic powder.
  6. Bake for 25-30 minutes until veggies are fork tender.
  7. Remove from oven and sprinkle with Parmesan cheese.
  8. Serve immediately.
