We enjoy a variety of quesadillas around here. They are quick and easy to make for lunches or snacks.
One of the newest ones that I’ve been making for lunch is a pizza quesadillas.
Gluten Free Pizza Quesadillas Recipe
Ingredients:
- Gluten Free corn tortillas
- Slices of cheese (we use raw cheddar) or shredded cheese
- Pizza toppings (we use turkey pepperoni in ours – sometimes we add peppers, onions, tomatoes…)
- Marinara sauce (for dipping)
Directions:
- Heat up the cast iron skillet (medium high).
- Place one corn tortilla on hot skillet.
- Add one slice of cheese
- Top with desired pizza toppings.
- Cover toppings with another corn tortilla.
- Heat for approx. 1 – 2 minutes on each side until cheese is melted and tortillas are slightly browned (Munchkin likes hers a little softer; Daddy likes his a little more crispy.)
- Using pizza cutter, slice into four wedges. Serve with marinara sauce for dipping.
