Quick Gluten Free Lunch – Pizza Quesadillas

We enjoy a variety of quesadillas around here. They are quick and easy to make for lunches or snacks.

One of the newest ones that I’ve been making for lunch is a pizza quesadillas.

Gluten Free Pizza Quesadillas Recipe

Ingredients:

  • Gluten Free corn tortillas
  • Slices of cheese (we use raw cheddar) or shredded cheese
  • Pizza toppings (we use turkey pepperoni in ours – sometimes we add peppers, onions, tomatoes…)
  • Marinara sauce (for dipping)

Directions:

  1. Heat up the cast iron skillet (medium high).
  2. Place one corn tortilla on hot skillet.
  3. Add one slice of cheese
  4. Top with desired pizza toppings.
  5. Cover toppings with another corn tortilla.
  6. Heat for approx. 1 – 2 minutes on each side until cheese is melted and tortillas are slightly browned (Munchkin likes hers a little softer; Daddy likes his a little more crispy.)
  7. Using pizza cutter, slice into four wedges. Serve with marinara sauce for dipping.
