Gluten Free Pizza Pockets

Ingredients:

  • 2 C gluten free flour
  • 1/2 tsp salt
  • 2 large eggs + 1 large egg yolk
  • 1/2 C sour cream
  • 1/4 C butter
  • 1 tsp garlic powder
  • 1 tsp oregano or Italian seasoning
  • pizza sauce
  • mozzarella cheese
  • other pizza toppings (optional)
  • warm water

Directions:

  1. Start boiling a pot of water.
  2. Combine butter and gluten free flour until butter is pea-sized.
  3. Add salt, garlic powder, oregano, eggs, and sour cream.
  4. If needed, add warm water to form dough that is soft, but not sticky. (You may or may not need the water.)
  5. Roll out dough to 1/8″ to 1/4″ thickness.
  6. Cut dough into rectangles.
  7. Fill using pizza sauce, cheese, and other pizza toppings (if desired)
  8. Fold dough over filling and seal (use warm water on edges if necessary to get a good seal).
  9. Drop in boiling water. Cook for 3-4 minutes until pockets float to the top of the water.
  10. Fry or bake pizza pockets until crisp and golden.
  11. Serve with pizza sauce for dipping.
