Gluten Free Cherry Cheesecake

D decided that he’d really like to have some cheesecake, so I threw together this quick no-bake version for him.  I simply used a package of broken gluten free arrowroot cookies that crumbled in the blender and some melted butter to create the crust.  I then whipped together a cup of heavy whipping cream, a block of softened cream cheese, 1/3 to 1/2 cup of powdered sugar, 2 Tbsp maraschino cherry syrup (out of jar or homemade), and 1 tsp pure vanilla extract to create the cheesecake filling.  I topped the cheesecake with mini chocolate chips and maraschino cherries before…

Jurassic Pumpkin

The housing office in base housing offers kids the opportunity to come to the “pumpkin patch” and pick out a pumpkin.  Usually, we seem to miss out on the best pumpkins, but this year, the pumpkin patch opened the day of D’s surgery.  One of the things that I did to keep Munchkin busy was to take her over to pick out her pumpkin.  She was pretty excited that she was able to get a really nice pumpkin.
