Recently, we came across some brown rice couscous from Lundberg Farms at our local grocery store.  It’s been some time since we’ve had couscous, so we decided to go ahead and purchase a box.  It sat in our pantry for some time until one night when I needed something quick and easy to eat.

I had some chicken sausage in the fridge that needed to be used, so I grabbed the box of couscous to use as a side.  We enjoy eating our chicken sausage with green peppers and onions.  While I cooked up the couscous, I sauteed the peppers and onions with a little bit of garlic in the cast iron skillet.  I sliced up the chicken sausage into bite sized pieces which allows for fast cooking and tossed them in the hot cast iron skillet to cook them.  Once the sausage was cooked through, I stirred together the peppers, onions, and sausage and served them over the couscous.

The couscous was not a big hit with Munchkin, so she ended up giving Daddy her couscous and just ate the chicken sausage with peppers and onions.  She said that it needed more flavor, so next time I may need to make some sort of sauce for this dish.  Daddy thought it was a yummy meal and happily ate the leftovers the next day.
