Ultimate Gluten Free Yellow Cake

Yellow Cake Ingredients:

1 C plus 2 Tbsp GF flour (with xanthum gum already in it)
1/2 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 package vanilla pudding mix

1/4 C sugar
1/4 C honey (can replace with sugar if preferred)
2 eggs
1/2 C vanilla yogurt
1/2 C evaporated milk
1/2 tsp vanilla extract
1/2 tsp almond extract

Directions:

1. Preheat oven to 350 degrees
2. Cream together the sugar, honey, yogurt, and eggs
3. Put all dry ingredients together in a bowl and wisk together
4. Add flour and milk/extracts to creamed sugar mixture and beat on medium for 4 minutes.
5. Bake at 350 degrees (12 minutes mini muffins, 20 minutes regular muffins)

**If you would like marble cake, take a portion of the cake batter and add cocoa powder to it. Swirl the chocolate batter into the yellow batter.**

  1. Can the yogurt and evaporated milk be replaced with something else due to lactose intolerance? Thank you.

    • I’m not sure as it’s not something that I’ve tested with this recipe.
