Gluten Free Pancakes with Warm Blackberry PureeProject 365 – #146

For D’s first official day back to work, I decided to make up some apple cinnamon pancakes. To make them just a little more special, I took some of our juicy blackberries and created a puree. First, I tossed a couple of cups of blackberries into the blender. I added roughly 1/4 cup of orange juice and a little honey for sweetener. Once it was all nicely blended, I placed it in a small sauce pan to warm it up.

It turned out quite well.  We decided that we might need to try it out on some vanilla ice cream later.  **grin**

Munchkin preferred to just have regular syrup on her pancakes.  Since I made up a large batch of batter, we’ll be able to have for breakfast the rest of the week.  It’s nice to take a break from making breakfast every day.  **wink**

D’s first day back ended up being a short day.  We also needed to head off base to pick up his new pain meds as they didn’t have them on base.  Even though it was a short day, it ended up being a long, tiring day for D.  He was able to drive which made him happy.  He crashed shortly after we arrived him.  It will definitely take some time to work back up to a normal day.
