Gluten Free Breakfast SandwichProject 365 – #139

D loves to have his bigger breakfasts.  While he’ll eat cereal, he would much rather have eggs, pancakes, waffles, breakfast burritos… You get the idea.  He likes to start his day off with a hearty meal.  Before his surgery, he would make his own breakfast burritos or omelets or heat up something I had already made such as waffles or pancakes.  Now, he’s not able to do the cooking – at least not yet.  The good this is that he’s not getting up really early, so I can make breakfast at my own pace.  **grin**

This morning, I decided that I’d make him some breakfast sandwiches using Udi’s gluten free multi-grain bread.  I used our favorite raw milk cheddar cheese, eggs, and some thinly sliced roasted turkey breast.  Yummy!  I’ve also gotten quite good at making his morning coffee.  (I’m not a coffee drinker.)

After lunch, D asked to go over to work to get a couple of things done.  I needed to pick up a few things from the store and get some gas, so I dropped him off and then picked him up on the way home.  It’s the first time he’s actually gone in to work since the surgery.  He’s not quite ready yet, but when things have to be done….  He was only there for an hour and a half or so.  Now, he’s resting.  It seems like little outings take a lot out of him.  Still it’s progress, and we’ll take it.
