Ingredients:

  • 3 boneless, skinless chicken breasts
  • 1/4 C sweet rice flour
  • 1/4 C brown rice flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Directions:

  1. Combine flours, salt, pepper, garlic powder, and onion powder.  Place on plate or bowl.
  2. One by one coat the chicken breasts with flour mixture.  Set aside on plate.
  3. In pan, heat 1- 1 2/2 inches of oil until it sizzles when sprinkled with water.
  4. Turn heat down to medium-high and careful place chicken in oil.
  5. Cook 15 minutes, turning to brown all over.
  6. Turn heat down to medium-low and cover.  Cook chicken until internal temperature reaches 170 degrees F.

Variations:

  • Cut chicken in cubes prior to coating with flour to make nuggets
  • Cut chicken in strips prior to coating in flour  to make chicken strips
