Confetti Fajitas
Ingredients:
- 1 lb. skinless, boneless chicken breasts
- 2 Tbsp olive oil
- 1 tsp garlic powder
- 1 tsp seasoning salt
- 1/4 green pepper
- 1/4 red pepper
- 1/4 yellow pepper
- 1/4 orange pepper
- 1/4 red onion
- 1/4 white onion
- 1/4 yellow onion
(all ingredients are approximate based upon taste; can use 1 type of pepper and/or onion as desired)
Directions:
- Preheat oven to 400 degrees
- Thinly slice onion & pepper
- Cut uncooked chicken breast into small strips (I cut while still partially frozen)
- Place onions, peppers, chicken into baking dish & toss with oil and seasoning
- Cover with aluminum foil
- Bake for 1 hour, stir halfway through cooking
- Serve over a bed of lettuce with cheese, sour cream, tomatoes, and tortilla chips
- Serve in warm tortilla with lettuce, cheese, sour cream, and tomatoes
- Serve over a bed of rice
**These can be cooked at a lower temperature for a longer period of time. They also work well in the crockpot as a fix it and forget it type meal. I like to make extra as it heats up really well.
