Gluten Free Breakfast Bars

Gluten Free Oatmeal Breakfast Bars


  • 1/2 C butter, melted
  • 1/2 C honey
  • 1/2 C brown sugar
  • 3 C gluten free oats (substitute Bob’s Red Mill Mighty Tasty GF Hot Cereal if you can’t do oats)
  • 1 1/2 C buttermilk
  • 1 Tbsp cinnamon (use less if you don’t like cinnamon as much as we do)
  • 2 eggs, beaten
  • 2 tsp vanilla extract
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 C raisins, dried fruit, chopped apples, nuts… (optional)


  1. The night before, combine butter, honey, sugar, gf oats, and buttermilk in a bowl.  Soak overnight.
  2. The next morning, add the cinnamon, eggs, baking powder, salt, and optional ingredients.
  3. Pour into a greased 11X7 pan, smooth out so it bakes evening.
  4. Bake at 350 degrees F for 35-40 minutes.
  5. Allow to cool.  Cut into bars.  Enjoy!
