Crockpot BBQ Shredded Chicken Ingredients: 3 boneless skinless chicken breast gluten free bbq sauce rice, gluten free rolls (optional) Directions: Place frozen chicken breasts in crockpot.  Cook on high for 2-3 hours depending on crockpot. Remove chicken breasts and shred with fork.  Turn crockpot to low. Place shredded chicken in the crockpot with 1/4 – 1/2 C of your favorite gluten free bbq sauce. Gluten Free BLT Ingredients: 2 tomatoes, sliced lettuce 1 package turkey bacon mayo 5 gluten free buns (I used Chebe mix to make buns) Directions: Make buns or warm purchased buns Cook up turkey bacon Assemble sandwich ~ layer of bacon, lettuce, tomato, spread mayo on bun Enjoy while still warm ***As always, make sure all ingredients are gluten free ***

Gluten Free Bean & Cheese Quesadillas Ingredients: 1 C Shredded Cheese (I use a pepper jack & cheddar blend) 8 Wraps (I use Sandwich Petals or gf corn tortillas) 1/2 C re-fried beans Olive Oil Garlic Powder Sides: sour cream, salsa, tomatoes, olives, onions, peppers… Directions: Spray or brush olive oil on bottom of wrap & sprinkle with garlic powder. Gluten Free Chicken Stir Fry Ingredients: 4 C cooked brown rice 1-2 C frozen or cooked fresh veggies 2 small boneless, skinless chicken breasts 1-2 Tbsp butter 2 Tbsp Norlander’s Original Gluten Free Teriyaki Sauce 4 Tbsp water Gluten Free Soy Sauce Cut up chicken breasts into bite-size pieces.  Place in marinade of 1 Tbsp Teriyaki sauce and 4 Tbsp water.  Marinate overnight. Crockpot Chicken Taco Soup This simple dish has quickly become a favorite around our house. The original idea came from our neighbor. A few quick modifications lead to this version. This is not an overly spicy dish. If you want more heat, just add more chilies and/or seasoning. You could easily add some seasonal veggies to add more flavor/color.
