I admit that cookies are my weakness, so it was hard when we went gluten free as I had to learn how to bake all my favorite cookies all over again. Cranberry Salad A friend of our family brought us over some of this cranberry salad after my surgery.  It was one of the things that sat well with my stomach.  I really enjoyed it and asked for the recipe.  While this is normally made for the holidays, it would be great any time of the year.  It’s one of those classic potluck dishes.  I modified the original recipe just slightly. Gluten Free Pizza Pockets Ingredients: 2 C gluten free flour 1/2 tsp salt 2 large eggs + 1 large egg yolk 1/2 C sour cream 1/4 C butter 1 tsp garlic powder 1 tsp oregano or Italian seasoning pizza sauce mozzarella cheese other pizza toppings (optional) warm water Directions: Start boiling a pot of water. Gluten Free Pierogies Ingredients: 2 C gluten free flour 1/2 tsp salt 2 large eggs + 1 large egg yolk 1/2 C sour cream 1/4 C butter warm water Directions: Start boiling a pot of water. Combine butter and gluten free flour until butter is pea-sized. Add salt, eggs, and sour cream. If needed, add warm water to form dough that is soft, but not sticky.  (You may or may not need the water.) Roll out dough to 1/8″ to 1/4″ thickness. Crockpot BBQ Shredded Chicken

Crockpot BBQ Shredded Chicken Ingredients: 3 boneless skinless chicken breast gluten free bbq sauce rice, gluten free rolls (optional) Directions: Place frozen chicken breasts in crockpot.  Cook on high for 2-3 hours depending on crockpot. Remove chicken breasts and shred with fork.  Turn crockpot to low. Place shredded chicken in the crockpot with 1/4 – 1/2 C of your favorite gluten free bbq sauce.
