No-Bake Chocolate Peanut Butter Coconutties

Posted in Gluten Free, and Homemaking

Yep, I totally made that name up. lol! After hearing about chocolate cravings most of the day yesterday and then having D pining for something sweet last night, I looked around my pantry to see what I had on hand that could make a nice, quick and easy dessert. These gluten free treats don’t look like anything spetactular, but they taste great. You can vary the flavor based upon what chocolate you use. For an extra punch of flavor, you could toast the coconut. Gluten Free No-Bake Chocolate Peanut Butter Coconutties Recipe Ingredients: 1 1/4 C unsweetened coconut 1 C…

Happy 13th Birthday, Munchkin!

Posted in Family, and Photography

Our baby girl is 13. It’s hard to believe we’re parents to a teenager. Munchkin’s requested meals for her birthday from top to bottom all gluten free: homemade french toast sticks with fresh strawberries, turkey sandwich with apple slices, baked mac ‘n cheese with tomato salad, strawberry shortcake in the shape of a heart. Daddy gave Munchkin this ring for her birthday. It’s inscribed with Jeremiah 29:11 – “For I know the plans I have for you,” declares the LORD, “plans to prosper you and not to harm you, plans to give you hope and a future.”

A Simple Sunday Dinner

Posted in Family, Gluten Free, and Homemaking

We view Sunday as a day of worship, rest, and family time. Sunday mornings are spent worshiping and learning about our Savior, our Creator. Afternoons are spent relaxing as a family. Sometimes, we head out and do some exploring. Other times we watch a movie or play games. While the ideal is no work on Sundays, the reality is that sometimes D needs to work on a vehicle later in the day, but oddly, he usually finds that relaxing as well. Because we do view Sunday as a day of rest, I don’t cook elaborate meals on Sundays. Lunches are…

Crockpot Chicken Parmesan

Posted in Gluten Free, Homemaking, and Photography

Some days, you know that you’re just not going to have time for something like traditional gluten free baked chicken Parmesan. On those days, I made a cheater version in the slow cooker. Because I use the “dump” method for this, there isn’t a set recipe for it. I like to make extra, so we can make sandwiches the next day (or later in the week). Slow Cooker Chicken Parmesan Recipe Ingredients: 5 boneless, skinless chicken breasts 2 jars of marinara sauce seasoning (I generally use garlic, pepper, salt, oregano, parsley, basil.) shredded Parmesan cheese Directions: Place chicken breasts in…

Flourless Peanut Butter Chocolate Chip Cookies

Posted in Gluten Free, Homemaking, and Photography

These large flourless peanut butter chocolate chip cookies are easy to make as the ingredient list is short. Kids will have fun helping make these naturally gluten free cookies. Plus, there is something fun about having giant cookies. This recipe makes roughly 18 large cookies. You can use m&ms if you want to add more playfulness and color to the cookies. For adults, add in some chopped nuts and chocolate chunks instead of just using chocolate chips. If you use natural peanut butter, you may find that you need to add a little extra oil like coconut oil. I like to…
