Yep, I totally made that name up. lol! After hearing about chocolate cravings most of the day yesterday and then having D pining for something sweet last night, I looked around my pantry to see what I had on hand that could make a nice, quick and easy dessert. These gluten free treats don’t look like anything spetactular, but they taste great. You can vary the flavor based upon what chocolate you use. For an extra punch of flavor, you could toast the coconut.
Gluten Free No-Bake Chocolate Peanut Butter Coconutties Recipe
Ingredients:
- 1 1/4 C unsweetened coconut
- 1 C chocolate chips
- 1/4 – 1/2 C peanut butter
- pinch of salt (optional)
Directions:
- Melt chocolate and peanut butter over double-boiler or in microwave (30 second increments, stirring after each increment).
- Stir in the pinch of salt.
- Fold in the coconut until thoroughly combined.
- Spoon small* “blobs” of the mixture onto a prepared cookie sheet (I use parchment paper)
- Place in refrigerator to set.
- Store in airtight container in cool location (or refrigerator)
*I created 12 coconutties with this recipe, but you can adjust the size according to your desired serving size.
