Blueberry Freezer Jam Ingredients: 2 cups crushed blueberries (approximately 2 pints whole) 2 Tbsp. lemon juice 4 cups sugar 1 pouch (3 oz) certo liquid pectin Directions: Wash and rinse containers for jam. Wash and crush berries, one cup at a time. Place 2 cups berries in bowl and stir in 4 cups sugar. Mix well. Let stand for 10 minutes. Stir occasionally. Stir pectin into lemon juice in different bowl. Stir pectin mixture into berry mixture. Stir constantly until all sugar is dissolved. Pour into prepared containers. Chocolate Peanut Butter Pretzel Bites Ingredients: 1 package caramels 1/4 C butter, cubed 2 Tbsp water 5 C gf minature pretzels 1 jar (18 oz) peanut butter 26 oz milk chocolate candy coating Directions: In a microwave safe bowl, melt caramels with butter and water; stir until smooth Spread one side of the pretzel with 1 tsp peanut butter; top with 1/2 tsp caramel mixture Place on waxed paper-lined baking sheet; refrigerate until set In a microwave safe bowl, melt candy coating. Yummy, yummy. It’s time for the Appetizer & Snacks Edition of Favorite Ingredients Friday. Now, we love snackage around this house, so finding a recipe to share really isn’t that difficult. I have to admit that I’m particularly proud of this recipe because it’s the first gluten free recipe that I’ve created from scratch myself. It turned out well and you can’t tell that the cookies are gluten free. Yum!
