This is my semi-homemade version of gluten free cinnamon raisin biscuits.  Sometimes it’s nice to be able to use a mix when making gluten free baked goods. Ingredients: 2 Cups Pamela’s Baking Mix 1 Stick of butter 2/3 Cup buttermilk 1/2 tsp vanilla 3 Tbsp brown sugar 1-2 Tbsp cinnamon 1/4 raisins (more if desired) Frosting ~ powdered sugar, cream, vanilla Directions: Cut butter into baking mix until thoroughly combine; pea sized pieces of butter Add buttermilk, vanilla, brown sugar, and cinnamon until thoroughly combined Stir in raisins; dough will be loose and moist Drop biscuits onto cookie sheet or…

Gluten Free Peanut Butter Chocolate Cookies For Munchkin’s homeschool Valentine’s party, I happily agreed to make the cookies.  Because it was a Valentine’s Day theme, I wanted to make sure I transformed the regular flourless peanut butter thumbprint cookies into something a little more special. Cinnamon rolls (from a can) were a regular part of our weekend breakfast menu before we switched to a gluten free diet, and Munchkin has dearly missed those cinnamon rolls.
