Confetti FajitasIngredients: 1 lb. skinless, boneless chicken breasts 2 Tbsp olive oil 1 tsp garlic powder 1 tsp seasoning salt 1/4 green pepper 1/4 red pepper 1/4 yellow pepper 1/4 orange pepper 1/4 red onion 1/4 white onion 1/4 yellow onion (all ingredients are approximate based upon taste; can use 1 type of pepper and/or onion as desired) Directions: Preheat oven to 400 degrees Thinly slice onion & pepper Cut uncooked chicken breast into small strips (I cut while still partially frozen) Place onions, peppers, chicken into baking dish & toss with oil and seasoning Cover with aluminum foil Bake…

Cooking Class: Chicken & Cheese Quesadillas

Munchkin is playing catch up with the online cooking class. Two weeks ago, I was sick. Last week, we were out of town. This week, we had just gotten back in town. Today, for lunch, Munchkin decided to do the lesson with chicken & cheese quesadillas. We were thrilled to find some full size brown rice tortillas at Trader Joes yesterday. Normally, we need to use small corn tortillas, so these were a real treat. Everything was very tasty, and Munchkin was thrilled that she was able to help out as Daddy and I were busy working on the house.

Two weeks ago, we were getting ready to head on vacation, and I got sick, really sick. I was in bed for several days. I only got up when I absolutely needed to do something. I didn’t know if we’d be able to go as planned. The day before we were scheduled to leave I hadn’t even packed for the trip.
