Somehow, we’ve managed to get into a rut for eating while D has been gone. I was requested to post the recipe for the popcorn chicken that I listed on my menu for Menu Plan Monday. So here it is (this is for 2-3 people): 2-3 Raw, Chopped Chicken Breasts (can use other cuts if you prefer) 1/2 C bread crumbs (for gluten free – use crushed gf tortilla chips) 1 tsp Italian seasoning 1/4 C grated Parmesan cheese Put ingredients in Ziploc baggy and toss until coated. Make It From Scratch: Planter Boxes

As I stated in my Frugal Friday post, I decided to use the wood that I had removed from the closets while working on updating the closets to make planter boxes. This year, we decided that we wanted to try to use the square foot gardening method. Now, my boxes aren’t truly square foot boxes as I used “scrap” lumber to make them. Ok, I’m running way behind today. We saw D off very early this morning (around 4:30 am). Munchkin didn’t fall back asleep after he left, so we’re both rather tired. Tackle It Tuesday: Flooring

I am pleased to announce that I was able to finish last weeks tackle of stripping the vinyl off the laundry and kitchen/dining room floor. I needed to get this done before my husband came home for his long weekend because we/he would be tackling the next phase — the laminate. So, this week’s tackle was installing the laminate.
