Meal Plan Monday: Week of March 26th

Somehow, we’ve managed to get into a rut for eating while D has been gone. I think it has something to do with the fact that I don’t have my recipe binder with me, and I’m too tired to think of any sort of variety. So, this week, along with a couple of requests from my daughter, I’m going to attempt a few things that we haven’t done for a while.

Here is my menu for this week:
1. Salisbury Steak, potatoes, green beans (daughter’s request)
2. Popcorn Chicken (daughter’s request)
3. Spaghetti w/biscuits (daughter’s request)
4. Twice baked loaded potatoes
5. Chicken popovers
6. Veggie platter with dip
7. Breakfast for dinner

I’ll post the recipe for the chicken popover either later today or tomorrow. They’re simple and delicious.
