My new Cricut has inspired me to start working on my handmade Christmas gifts.  The first project of the year is a prayer journal.  It’s pretty simple, but it makes a nice gift. Gluten Free Pumpkin Pie Recipe with Cinnamon Almond Whipped Cream Crust: Ingredients: 1 C butter, softened 2 1/2 C coconut flour 4 eggs 1 tsp coconut sugar 1 tsp salt 1 tsp cinnamon 3 Tbsp vanilla almond milk egg white – set aside Directions: Sift together dry ingredients. Beat together wet ingredients. Thoroughly combine wet and dry ingredients.  (I use my mixer for this because it’s easier.) A Productive Pre-Thanksgiving Day

As the day winds down, I am grateful that we had a very productive day.  I was actually able to eat a little today, so that is definitely something to be thankful for.  I was able to get most of the meal ready for tomorrow.  The turkeys are in the brine, so they’ll be ready for the oven in the morning.  I’m also thankful that Munchkin offered to help again by making delicious gluten free sweet potato muffins.
