My new Cricut has inspired me to start working on my handmade Christmas gifts.  The first project of the year is a prayer journal.  It’s pretty simple, but it makes a nice gift. Gluten Free Pumpkin Pie

Gluten Free Pumpkin Pie Recipe with Cinnamon Almond Whipped Cream Crust: Ingredients: 1 C butter, softened 2 1/2 C coconut flour 4 eggs 1 tsp coconut sugar 1 tsp salt 1 tsp cinnamon 3 Tbsp vanilla almond milk egg white – set aside Directions: Sift together dry ingredients. Beat together wet ingredients. Thoroughly combine wet and dry ingredients.  (I use my mixer for this because it’s easier.) Divide the dough into two ball and wrap tightly with plastic wrap.  Place in fridge for 1 hour. Remove the dough from the fridge and allow to warm up a bit prior to…

Old Fashion Fun with a Twist

One of the fun things about having a birthday at the end of October is that I can save that birthday money to purchase something in November during the Black Friday/Cyber Monday sales.  This year, I decided to take advantage of an exceptional offer at JoAnn Fabrics on a Cricut personal cutter.  Munchkin didn’t know what to think of it all until she saw all of the many things that we could create – including paper dolls. A Productive Pre-Thanksgiving Day

As the day winds down, I am grateful that we had a very productive day.  I was actually able to eat a little today, so that is definitely something to be thankful for.  I was able to get most of the meal ready for tomorrow.  The turkeys are in the brine, so they’ll be ready for the oven in the morning.  I’m also thankful that Munchkin offered to help again by making delicious gluten free sweet potato muffins.
