More Thanksgiving Baking for Munchkin

Today, Munchkin tackled making gluten free sweet potato muffins.  She decided to do a double batch since we like them so much.  The muffins turned out great.  Mmmm…. delicious! Munchkin is turning into quite the little baker.  I’m having so much fun teaching her how to bake and seeing her enjoyment as she accomplishes baking delicious treats.  She was grinning from ear to ear when Daddy promptly claimed all of the muffins because they were so good.  **grin**

Gluten Free No-Cook Cranberry Relish

My mom use to make this no-cook cranberry relish for us.  I never did find her old recipe, so I just recreated it from memory.  We do have a funny story to go along with this one.  When my sister and I were younger, my mom decided to allow us to help with making the cranberry relish.  She had one of the old grinders that you fastened to a table.  We started putting the ingredients into the grinder and turning the handle.  I’m not exactly sure what happened next, but before we knew it, there was cranberry relish all over…

I thought it would be fun to blog through our Thanksgiving menu, so today, the plan is to blog about our Thanksgiving prep.  My plan is to post recipes and pictures for the various items on our Thanksgiving menu throughout the day.  Here’s what our menu looks like this year. Gearing up for Thanksgiving

Our Thanksgiving preparations actually begin way back in October.  You see, we decorate for harvest starting on October 1st.  When the 1st of November arrives, we start to add in some Thanksgiving specific decorations.  The beginning of November also means that we’ll be doing some sort of a thankful craft.  This year, we did the Gratitude Tree.  Last year, we did the Giving Thanks Turkey craft.  Whatever craft we do, the purpose is to remind us to remain thankful during the month. Seeing how I’m still battling with a stomach bug, Munchkin decided that she would step up and help me get started on some of the Thanksgiving preparations.  Since we’re gluten free, part of the process is making bread for the express purpose of making stuffing/dressing.  The bread needs to sit and get a little stale prior to making the stuffing/dressing, so we needed to get started on the process today.
