It’s Time to Clear the Clutter

Project 365 – #227 Crockpot “Roast” Chicken is a super easy, quick meal that takes very little thought or preparation.  I literally take the whole chicken out of the freezer and put it in the crockpot around lunch time.  I season it generously with whatever seasoning I feel like using.  (I used Emeril’s seasoning blend for this chicken.)  To have the frozen chicken ready by dinner, I put the crockpot on medium or high.  If you want a crispy skin, you can place the cooked bird in the oven for 20-30 minutes prior to serving.  The chicken will fall right…

Project 365 – #211 It’s always nice to have an easy theme night.  Around our house, Mexican food is a favorite.  Plus, it’s an easy meal to put together.  Often, I’ll just make up all of the fixings, and everyone just creates the meal that they want that evening.  The meals may include: nachos, tacos, fajitas, quesadillas, taco salads…  I serve it up with some yummy fresh salsa and chips for a fun family Mexican night that everyone enjoys.

Project 365 – #204 Unexpected company has arrived, and you don’t have anything planned to eat.  What are you going to do?  You pull out some fresh fruit (like cherries) and slice them up.  Then you make up some homemade whipped cream using heavy whipping cream, a little powdered sugar (or honey), and some pure vanilla extract.  Top the fresh fruit with some whipped cream for a quick and easy desert or snack to serve to your guests.
