I decided that I wanted a slightly different cake for my birthday. Cheesecake sounded good, but a regular cake also sounded good. I thought it would be tasty to combine the two. I started off with a gluten free Betty Crocker devil’s food cake mix and baked it as normal in a round cake pan. While the cake cooled, I made up a modified cream cheese frosting. Since I wanted it to be more like cheesecake, I did not make it as sweet. “Cheesecake” Frosting 1 stick butter (salted) 1 block cream cheese 1 cup powered sugar 1/2 cup heavy…

Anytime Snacking with Crunchmaster Crackers
Posted in Gluten Free, Homemaking, and Reviews
As I stated in a previous post, we really enjoy Crunchmaster crackers at our house, so when I was asked if we’d like to try out some of their new cracker line, I quickly said yes. We received a package of the White Cheddar Multi-Grain Crakcers as well as a package of 7 Ancient Grains Hint of Sea Salt Crackers. The timing was perfect because I wanted something quick and easy for game day snacking. I quickly sliced up some cheese and made some chicken salad to serve with the crackers. We decided to start out by trying the 7…
Brown Rice Couscous with Chicken Sausage
Posted in Gluten Free, and Homemaking
Recently, we came across some brown rice couscous from Lundberg Farms at our local grocery store. It’s been some time since we’ve had couscous, so we decided to go ahead and purchase a box. It sat in our pantry for some time until one night when I needed something quick and easy to eat. I had some chicken sausage in the fridge that needed to be used, so I grabbed the box of couscous to use as a side. We enjoy eating our chicken sausage with green peppers and onions. While I cooked up the couscous, I sauteed the peppers…
Gluten Free Coconut Cake

Whisk together the coconut milk and honey. Slowly pour over the cake.…
Setting Goals for the 2011-2012 Homeschool Year
Posted in Family, Homemaking, and Homeschooling
The 2011-2012 homeschool year here at Semper Fidelis Academy is well under way. We’ve already changed a few things since I posted our homeschool plans for the year. One of the biggest changes is probably dropping the renewable energy study and beginning the horse study. I need to do some more work on the renewable energy study to make it more independent study friendly for Munchkin. I can’t say that she’s bummed to be starting the horse study sooner rather than later. She was blessed with some excellent horse resource books from Grandma, so she’s happily reading and studying. Our…
