We now live in an area where rock climbing is a big activity. Because of this, the base has a really nice rock wall climbing area in the gym. Daddy has been doing this as part of his regular workout during the week, and he wanted Munchkin to try it out with him. The gym has limited hours for kids (under 16) climbing. Fall is here which means I can turn on the oven without feeling like we’re roasting in the house. I decided to play around with my basic flourless peanut butter cookie recipe to create flourless smore cookies. I was craving the taste of smores. Since we couldn’t have an open fire and roast smores, this seemed like a good alternative. Cooler weather calls out for hot, fresh baked goods, and these tasty cookies are easy to make and delicious. Munchkin wanted to do something special for my birthday. Normally, I make the cake/cupcakes/cheesecake/pie for birthdays either by myself or with a little assistance from Munchkin. This year, she decided that she wanted to do it all by herself. Other than asking a question here or there, she was able to make the gluten free marble cupcakes and homemade peanut butter buttercream frosting completely by herself. They were delicious, and Daddy said that he was quite lucky because he now had two girls in his life that could make him yummy cupcakes. 😉 Needless to say, Munchkin was quite pleased…
This month’s community outreach for the horse rescue was a fall festival where the kids could go trick-or-treating on horseback. It was a unique opportunity that was a big hit for both the regulars at the ranch as well as kids from the community. Another fun activity was a costume contest for both people and their horses. Munchkin decided that she wanted to be Lady Carliss from the Knights of Arrethtrae book series. On Tuesday, I received a text message from Munchkin’s best friend’s mom (who, for now, lives in North Carolina). They were heading through our neck of the woods after visiting with family, and there was the possibility that we would be able to meet up.
