Easy Chicken Cacciatore

After eating salads every day for the week, I had a craving for something different. I didn’t want anything complicated as it was just me eating, and I didn’t want to make the drive into town to get ingredients. After looking at I what I had on hand, I decided on this easy version of chicken cacciatore.

You can cook up your own boneless, skinless chicken breasts, but I happened to have some already cooked sliced chicken breasts in the freezer that I decided to use to make cooking even easier.

As soon as I started to smell the delicious aroma coming from the pan, I knew that I had made the right choice for dinner. I let it simmer on low while I took care of the evening chores and came inside to a scrumptious meal.

Easy Chicken Cacciatore

Ingredients:

  • 3 boneless skinless chicken breasts, cooked and sliced
  • Pat of butter or olive oil
  • 10 baby portabella mushrooms, sliced
  • 1 small onion, diced
  • 2 green onions (just the green part)
  • 1 tsp parsley
  • 1 tsp basil
  • fresh black pepper and sea salt to taste
  • 1 clove garlic, crushed and minced
  • 1 can petite diced tomatoes (28 ounce)

Directions:

  1. Add butter or olive oil to pan over medium heat. Add onions and mushrooms.
  2. When onions are translucent, toss in the sliced chicken and chopped green onions and garlic.
  3. After sliced chicken is warmed up, pour in the can of diced tomatoes.
  4. Add in seasonings.
  5. Simmer for 5-10 minutes until the sauce thickens and flavors come together.
  6. Serve as is or over your favorite pasta. Sprinkle with cheese, if desired.

  1. I absolutely adore chicken cacciatore and when you make it the “normal” way it takes much longer (but…the “normal” day has wine hehehe)……I will definitely try yours!
