After eating salads every day for the week, I had a craving for something different. I didn’t want anything complicated as it was just me eating, and I didn’t want to make the drive into town to get ingredients. After looking at I what I had on hand, I decided on this easy version of chicken cacciatore.
You can cook up your own boneless, skinless chicken breasts, but I happened to have some already cooked sliced chicken breasts in the freezer that I decided to use to make cooking even easier.
As soon as I started to smell the delicious aroma coming from the pan, I knew that I had made the right choice for dinner. I let it simmer on low while I took care of the evening chores and came inside to a scrumptious meal.
Easy Chicken Cacciatore
Ingredients:
- 3 boneless skinless chicken breasts, cooked and sliced
- Pat of butter or olive oil
- 10 baby portabella mushrooms, sliced
- 1 small onion, diced
- 2 green onions (just the green part)
- 1 tsp parsley
- 1 tsp basil
- fresh black pepper and sea salt to taste
- 1 clove garlic, crushed and minced
- 1 can petite diced tomatoes (28 ounce)
Directions:
- Add butter or olive oil to pan over medium heat. Add onions and mushrooms.
- When onions are translucent, toss in the sliced chicken and chopped green onions and garlic.
- After sliced chicken is warmed up, pour in the can of diced tomatoes.
- Add in seasonings.
- Simmer for 5-10 minutes until the sauce thickens and flavors come together.
- Serve as is or over your favorite pasta. Sprinkle with cheese, if desired.

I absolutely adore chicken cacciatore and when you make it the “normal” way it takes much longer (but…the “normal” day has wine hehehe)……I will definitely try yours!
