Gluten Free Hawaiian Pizza

When we received some of the new Wholly Salsa pineapple salsa to try out, I immediately knew that I wanted to make D some Hawaiian Pizza as it’s something that he really enjoys. Since the pineapple salsa has the peppers and spices already mixed in, prep for the pizza was very easy.

To make the pizzas quickly when I don’t want to go through the process of making regular gluten free pizza crust, I just grab some of the gluten free brown rice tortillas. Since it’s been really hot here, I’ve been avoiding baking in the oven whenever possible which means that I’m taking advantage of using cast iron pans on the stove rather than my traditional baking on pizza stones.

For this pizza, I simply preheated the cast iron skillet pan over medium high heat. Once it’s nice and hot, I place the brown rice tortilla on it and add approximately 1/4 cup of marinara sauce. Now it’s time for a generous sprinkling of cheese. (I use whatever I have on hand – mozzarella, cheddar, parmesan….) I top the cheese base pizza with some ham and the pineapple salsa. To make sure the cheese melts nicely before the bottom of the tortilla gets too brown, I place another cast iron pan over the pizza.

Munchkin didn’t really want a Hawaiian pizza, so I just made her a turkey pepperoni pizza instead. It was a fast, easy pizza for a busy evening. D ended up having a couple of pizzas as he really enjoyed the flavor created with the combination of the ham and pineapple salsa. Because these are quick to make, putting these together after a Friday evening Tae Kwon Do class was a breeze.

  2. Oh, thanks for the awesome idea! My son was talking about pizza and I’ve been dreading making a low carb crust. I didn’t even know you could get brown rice tortillas. I’m going to find some to try pizza. My children will be thanking you when they get pizza again!
