Strawberry Jam

On Wednesday, we headed over to a local berry “farm” (or so we thought). It turned out to be a field on the side of the road, but we didn’t care as the strawberries were very tasty. We picked 3 very full buckets of strawberries. We enjoyed just eating them fresh and with some whipped cream. D enjoyed them on his cereal. But, I wanted to make some strawberry freezer jam like my mom use to make us growing up.

So, I spent a good part of the day hulling and cutting up the strawberries. D was amazed at how much sugar is involved in making jam. (Yes, I know there are low/no-sugar recipes, but it’s not the same).

Anyway, here’s the recipe that I used:

2 1/4 C crushed Strawberries
2 Tbsp Lemon Juice
4 C Sugar

Mix the above together and let sit for 10 minutes or so

3/4 C water
1 pkg powered pectin

Place the above ingredients in a small saucepan and bring to a boil. Stir for 1 minute at a hard boil.

Combine the pectin and strawberry mixture. Stir for about 3 minutes. Place in freezer safe jars. Let the jam set up before placing in the freezer.

The jam turned out wonderfully. Munchkin even helped with a couple of batches. I plan on making some more, but I ran out of pint size jars….

Now, I just need to tackle making Strawberry Pie! Anyone with some good recipes for strawberries???

    what is the difference to a freezer jam? I’ve never heard that term.

    We love strawberry jam. I do have a good strawberry pie recipe. I’ll find it and try to post it tomorrow!

    Dirkey, freezer jam does not require cooking and is stored in the freezer. Regular jam needs to be cooked and processed in a hot water canner, but it can be stored in the pantry.

    I can vouch for the goodness of freezer jam, yum! I still haven’t gone down to pick strawberries…there’s a place near V. Beach. Sounds like that maybe is where you went. It’s far for us, but I’ve heard great things about…fun picking your own fruit.
