Introducing Rosita the Guinea Pig

Posted in Family, and Photography

Project 365 – #160 Guinea pigs are highly social animals, so they do best when there are at least two of them together.  When Munchkin adopted Choco, there was only one guinea pig, so we’ve been watching local boards waiting to see if any guinea pigs came up for adoption.  Yesterday, a girl from 4-H posted on craigslist that she had guinea pigs that needed a new home. We emailed back and forth for some time.  She offered to bring the piggies for Munchkin to examine.  We came home with Rosita.  That little tuft of white fur called out to…

A New Family Member

Project 365 – #157 Munchkin has really been missing her guinea pigs.  One passed away while D was deployed last time, and a few months later we needed to give up the other one for adoption due to our cross country move.  Since that time, she’s been wanting guinea pigs.  D and I held off for quite some time as I didn’t want the responsibility of taking care of another pet. Earlier this year, D told Munchkin that if she could show that she would be completely responsible for a pet, we would consider it.  She had to write up…

It’s Grilling Time!

Project 365 – #148 Here in Arizona, we can grill pretty much year around, but the summer heat seems to beckons us to grill as it keeps the stove/oven from heating up the house.  I love tossing veggies on the grill either with some chicken (or other meat) or by themselves.  It’s fun to think of the grill as our outdoor kitchen and try to expand the possibilities of what goes on the grill. Technically, corn is a grain and not a veggie, but for all necessary purposes, we think of corn as a veggie.  I like to boil it…

Gluten Free Pancakes with Warm Blackberry Puree

Project 365 – #146 For D’s first official day back to work, I decided to make up some apple cinnamon pancakes. To make them just a little more special, I took some of our juicy blackberries and created a puree. First, I tossed a couple of cups of blackberries into the blender. I added roughly 1/4 cup of orange juice and a little honey for sweetener. Once it was all nicely blended, I placed it in a small sauce pan to warm it up. It turned out quite well.  We decided that we might need to try it out on…

Grilled Corn

Posted in Family, Gluten Free, Homemaking, and Photography

Project 365 -#145 Today, I fired up the grill to grill some fresh corn and cajun boneless, skinless chicken breasts. I also made some cajun seasoned butter to put on the corn. It was delicious. In fact, Munchkin and D enjoyed the corn so much that we’ll probably have more tomorrow. I just need to get some more butter as we’re completely out of butter. lol! D had a follow-up appointment today.  While the surgery went well, it’s not taking care of all of the pain.  Next week, he’ll have to head in for back injections.  There may be another…
