Gluten Free Strawberry Pie Ingredients: 2 1/2 C water 2 C white sugar 5 Tbsp gluten free cornstarch 1 small pk strawberry gelatin 2 quarts strawberries, sliced 2 9 inch gluten free pie crusts, baked Directions: Thoroughly combine sugar and cornstarch in small bowl. In a saucepan, combine water and sugar mixture. Cook over medium high heat, stirring constantly until mixture boils and thickens. Remove from heat and stir in the strawberry gelatin. For Valentine’s Day, I wanted to have a special dessert, but I didn’t have the time to bake anything that day.  I thought it would be fun to have some chocolate covered strawberries.  We’ve had store purchased chocolate covered strawberries before, but they’re rarely very good plus they are usually quite expensive.  We had to stop and get milk at the grocery store, so we picked up a container of strawberries for $2.50. Gluten Free Peanut Butter Chocolate Cookies For Munchkin’s homeschool Valentine’s party, I happily agreed to make the cookies.  Because it was a Valentine’s Day theme, I wanted to make sure I transformed the regular flourless peanut butter thumbprint cookies into something a little more special. Christmas can be dangerous for me because I really enjoy baking, and I also enjoy eating those baked goods.  Yesterday, Munchkin needed some cookies to take with her to her Awana Christmas party.  Since I was busy working on several other projects, I cheated and used a Betty Crocker Gluten Free chocolate chip cookie mix that I had on hand.  I tossed in some M&Ms to make it more festive and sprinkled some colored sugar on top.  I turned these into quite large cookies by using ice cream scoop sized balls of dough.  While I usually cook from scratch, it’s…
