Gluten Free Snickerdoodles Ingredients: 1/2 C butter 3 Tbsp cream cheese, softened 3 Tbsp sour cream 1/2 tsp pure vanilla 1 C sugar 1 egg 1 1/2 C gluten free flour 1/2 tsp baking soda 1/2 tsp baking powder 1/2 tsp xanthan gum Cinnamon sugar mixture (5 Tbsp sugar, 5 tsp cinnamon) Directions: Mix together gluten free flour, baking soda, baking powder, and xanthan gum. Gluten Free Peanut Butter Chocolate Cookies For Munchkin’s homeschool Valentine’s party, I happily agreed to make the cookies.  Because it was a Valentine’s Day theme, I wanted to make sure I transformed the regular flourless peanut butter thumbprint cookies into something a little more special. When we first went gluten free, I wanted to create some cookie recipes that didn’t require a lot of ingredients and were easy to make. Mixing up a bunch of flours to create the perfect flour blend was rather overwhelming. I wanted to be able to quickly put together cookies like before we were gluten free. These flourless peanut butter cookies fit the bill as they only required 4 ingredients that I always had on hand.
