Munchkin has really missed chicken nuggets, so I needed to find a fast, easy recipe to satisfy her craving… Ingredients:6 oz of your favorite tortilla chips (zesty is good for more flavor)1/2 C grated Parmesan cheese1 egg1 1/2 lbs of skinless, boneless chicken (cut into pieces) Directions: 1. Now these aren’t truly popovers, but it’s what we’ve always called them. This is something that I came up with when my husband and I were first married, and they were a hit. Ingredients: 2 Chicken breasts (once again, you can use your favorite cut)2 pats of butterItalian seasoningSaltPepper Directions: 1. Favorite Ingredient Friday: Popcorn Chicken

I was requested to post the recipe for the popcorn chicken that I listed on my menu for Menu Plan Monday. So here it is (this is for 2-3 people): 2-3 Raw, Chopped Chicken Breasts (can use other cuts if you prefer) 1/2 C bread crumbs (for gluten free – use crushed gf tortilla chips) 1 tsp Italian seasoning 1/4 C grated Parmesan cheese Put ingredients in Ziploc baggy and toss until coated.
