Cinnamon rolls (from a can) were a regular part of our weekend breakfast menu before we switched to a gluten free diet, and Munchkin has dearly missed those cinnamon rolls. Growing up, my mom would make us this delicious meal. She never had a recipe, so I had to go hunting for something that was similar to her recipe. With a little tweaking, I turned that recipe into a yummy gluten free treat. Ingredients:3/4 C gluten free pancake mix1/2 tsp salt1 Tbsp sugar4 eggs3/4 C milk1/4 C butter4 medium to large apples (thinly sliced) Topping:1/3 C sugar1 tsp cinnamon Directions: 1.
