I was making a quadruple batch of belguim waffles for D to put in the freezer, and I started having a problem with some of the waffles sticking for some reason.  I was doing nothing different, so it was just one of those crazy things.  The crazy, torn apart waffles looked horrible, but they tasted good.  Not wanting the waffles to go to waste, I decided to try an experiment with them. Cheese Quiche with Hash Brown Crust Ingredients: 3 C shredded hash browns 1 Tbsp butter, melted 1 cup grated cheddar cheese 3 eggs ¾ cup cream ¾ cup cottage cheese 1 tablespoon potato flour 2 teaspoons spicy mustard ¼ teaspoon minced onion ½ teaspoon sea salt ¼ teaspoon black pepper 4 tablespoon grated Parmesan cheese Directions: Preheat oven to 400 degrees F.  Grease pie pan. Peanut Butter Oatmeal Bars Ingredients: 1 cup gluten-free flour 1 cup gluten free oats 2/3 cup brown sugar 1/4 teaspoon baking soda 1/2 cup butter 1 cup peanut butter Directions: In a mixing bowl combine gluten free flour, gluten free oats, brown sugar and baking soda. Cut in butter till mixture resembles coarse crumbs. Reserve 1 cup of the flour mixture. Press remaining flour mixture into the bottom of an ungreased 8×8 pan. Spread with peanut butter. Gluten Free Oatmeal Breakfast Bars Ingredients: 1/2 C butter, melted 1/2 C honey 1/2 C brown sugar 3 C gluten free oats (substitute Bob’s Red Mill Mighty Tasty GF Hot Cereal if you can’t do oats) 1 1/2 C buttermilk 1 Tbsp cinnamon (use less if you don’t like cinnamon as much as we do) 2 eggs, beaten 2 tsp vanilla extract 2 tsp baking powder 1 tsp salt 1 C raisins, dried fruit, chopped apples, nuts… (optional) Directions: The night before, combine butter, honey, sugar, gf oats, and buttermilk in a bowl.  Soak overnight. This recipe is based on Crystal’s Lazy Granola.  It is easy and delicious. Gluten Free Lazy Granola Ingredients: 1 C brown sugar 1 C coconut oil 1 C honey 2 Tbsp cinnamon (we like cinnamon, so you may want to reduce this) 3 tsp vanilla extract 1 tsp almond extract 13 C gluten free oats 2-3 C dried fruit (optional) 1-2 C nuts (optional) Directions: Mix brown sugar, oil, and honey in a small saucepan being to a low boil.  Once boiling, remove from heat.
