Chicken salad is a nice light meal during the summer. You can add in veggies or fruit to give a little extra punch of flavor. As you can see, I’m working my way through our Bountiful Baskets veggies. I had never cooked or eaten baby bok choy, so I wasn’t sure what exactly to do with it. Roasted Cauliflower and Broccoli

Today, I picked up our Bountiful Baskets order, and I have to say that the organic baskets were wonderful this week. We received broccoli, cauliflower, cherries, mangoes, donut peaches, mushrooms, corn, purple kale, baby bok choy, celery, and cantaloupe. I also got a box of pineapple. One of the things that we’re currently working on in our home is learning more traditional baking and cooking skills.
