Gluten Free Pancakes with Warm Blackberry Puree

Project 365 – #146 For D’s first official day back to work, I decided to make up some apple cinnamon pancakes. To make them just a little more special, I took some of our juicy blackberries and created a puree. First, I tossed a couple of cups of blackberries into the blender. I added roughly 1/4 cup of orange juice and a little honey for sweetener. Once it was all nicely blended, I placed it in a small sauce pan to warm it up. Project 365 -#145 Today, I fired up the grill to grill some fresh corn and cajun boneless, skinless chicken breasts. I also made some cajun seasoned butter to put on the corn. It was delicious. In fact, Munchkin and D enjoyed the corn so much that we’ll probably have more tomorrow. I just need to get some more butter as we’re completely out of butter. lol! D had a follow-up appointment today.  While the surgery went well, it’s not taking care of all of the pain.  Next week, he’ll have to head in for back injections.  There may be another…

Project 365 – #139 D loves to have his bigger breakfasts.  While he’ll eat cereal, he would much rather have eggs, pancakes, waffles, breakfast burritos… You get the idea.  He likes to start his day off with a hearty meal.  Before his surgery, he would make his own breakfast burritos or omelets or heat up something I had already made such as waffles or pancakes.  Now, he’s not able to do the cooking – at least not yet.  The good this is that he’s not getting up really early, so I can make breakfast at my own pace.  **grin** This…

Project 365 – #131 We love to have family movie night.  Nothing seems to shout movie night like a bowl or two of popcorn.  We like to get the natural popcorn and add our own butter and salt.  Sometimes, we’ll add a little parmesan cheese to the mix.  Every now and then, I’ll make up a mock caramel corn.  Yum!
