Friday, Munchkin had her first baseball practice of the year since last week’s practice was rained out. On Saturday, she had her baseball clinic. I like how this league does these clinics as it gives all of the kids the opportunity to learn and/or brush up on the basics of the game. D helped with the kids on the team as Munchkin’s coach had to stay at one of the stations. It was such a nice, warm, sunny day that both D and Munchkin ended up with sunburns. Exhausted

I am exhausted. I was able to finish painting Munchkin’s room today which was a major feet. I had to paint the ceiling in addition to the walls. The whole room (ceiling included) was painted orange when we moved in. Sadly, I’m just now getting to painting the room for her. She’ll get to enjoy it while we’re still here, and it will help with resale. We painted the walls a light chocolate and the ceiling a light pink. Her closet and organizer are painted almond. I’ll post pictures once I get the room put back together. Tonight, she’s sleeping…

Cooking Class: Warm Chicken Salad with Poppy Seed Dressing

We have a new favorite dressing thanks to Munchkin and her online cooking class. Lately, we’ve been trying to stay away from packaged salad dressing, so it’s nice to have a new dressing to add to our homemade dressing recipes. Munchkin prefers the homemade ranch dressing, but Daddy and I really enjoyed the poppy seed dressing. We look forward to having the warm chicken salad with poppy seed dressing as part of our normal menu plan. It will be quite refreshing this summer with fresh veggies from the farmer’s market.

Cooking Class: Parmesan Chicken with Roasted Brussels Sprouts

Munchkin made another lovely meal from her online cooking class, and we’re delightfully stuffed from this very satisfying meal. Munchkin prepared parmesan chicken breasts with roasted brussels sprouts and potatoes. The potatoes were an add on since we had some baby red potatoes that needed to be used. The whole meal turned out really well. I had her make extra, so she’ll be able to use it in the salad she has planned for tomorrow. Daddy also wanted another meal to take with him for lunch tomorrow.
