Whew!! The temperatures and humidity are rising as we head across the southern part of our country. While I write, Munchkin and D are in the pool trying to cool off a bit. On Monday, we finished traveling across Georgia, traveled across Alabama, and stayed in Mississippi. We found out that it’s hard to find a place to camp in Mississippi due to a pipeline being put in. We’ve had two good days of traveling so far. We’ve traveled through Virginia, North Carolina, South Carolina, and now we’re in Georgia. The weather has been good for driving. Munchkin has gone decided to ride some with Mommy and then some with Daddy. I’m taking pictures along the way, but I’m unable to upload them at this time. Munchkin’s last baseball game was rained out, so we’ll just be heading over to pick up her trophy today before we leave. We’re all packed up. We’ve done the final check on the house. Ultimate Gluten Free Yellow Cake

Yellow Cake Ingredients: 1 C plus 2 Tbsp GF flour (with xanthum gum already in it)1/2 tsp baking soda1 1/2 tsp baking powder1/2 tsp salt1 package vanilla pudding mix 1/4 C sugar1/4 C honey (can replace with sugar if preferred)2 eggs1/2 C vanilla yogurt1/2 C evaporated milk1/2 tsp vanilla extract1/2 tsp almond extract Directions: 1. Preheat oven to 350 degrees2. Cream together the sugar, honey, yogurt, and eggs3. Put all dry ingredients together in a bowl and wisk together4. It’s hard to believe in a few days we’ll be saying goodbye to this place we have called home for 2 years. Most of the time, it was just Munchkin and I, but we have enjoyed this place.
