Thursday, our day started with some cool, refreshing fun. We had our first meeting with the newly formed homeschool group on base. We were pleased to see several familiar faces there as well as some new. We even reconnected with a friend that we had lost touch with several years ago. Ingredients: 2 C gluten free rice flour mix 1 tsp xanthan gum1 C sugar2 tsp baking powder1/2 tsp salt (mix together dry ingredients and set aside) 1 tsp vanilla extract1 Tbsp shortening, melted (or oil)3/4 C milk2 eggs (combine thoroughly) Directions: 1. Add dry ingredients into wet ingredients.2. Lightly spray donut trays with non-stick spray.3. Pour mixture into pans so they are about 3/4 filled4. Place in pre-heated 325 degree oven for 15 minutes (until toothpick comes out clean)5. These waffles use Sue Gregg’s Blender Waffle/Pancake batter as the base. Having most of the prep work done in the evening makes these waffles quick and easy in the morning.
