D really wanted me to make him some granola. He kept seeing commercials for it on tv and purchasing gluten free granola is REALLY expensive, so it was time for me to make him some granola. I wanted to try something slightly different this time to see if I could make a granola that Munchkin would enjoy. (She’s not big on honey, so granola made with honey doesn’t really go over all that well with her.)
Ingredients:
- 6 cups gluten free rolled oats
- 1 cup whole flax seeds
- 2 cup roughly chopped nuts (almonds, pecans, walnuts…)
- 1/2 cup brown sugar
- 2 tsp cinnamon
- 1/2 cup maple syrup
- 1/2 cup liquid coconut oil
- 1 1/2 tsp sea salt
- 1 Tbsp vanilla
- 2 cups dried fruit
Directions:
- Preheat oven to 250 degrees F.
- In a large bowl, combine the oats, flax seeds, nuts, cinnamon, and brown sugar.
- In a separate small bowl (or in glass measuring cup), combine maple syrup, coconut oil, vanilla, and salt.
- Combine wet and dry mixtures and pour onto 2 lined sheet pans (jelly roll pans with lips work best).
- Bake for 1 hour and 15 minutes. Stir every 15 minutes or so to make sure the granola browns evenly.
- Remove from oven and allow to cool slightly.
- Transfer into a large bowl and stir in dried fruit until evenly distributed.
- Once the granola is completely cooled, store in an airtight container.
Notes:
If your oven heats unevenly like mine does, then you’ll want to rotate the pans about half way through the baking cycle.

I never thought about adding flax seeds to our granola. Yum!
Did this turn out to be a chunkier granola that would be good for trail snacking? The last one I made tasted great but my guys were hoping for something more like commercial trail mix w/ chunks that they could grab easier.

For it to be in bigger “chunks”, you’ll want to add more of the liquid sweetener (Maple syrup or honey) and not stir it as much. You’ll then be able to break it into bigger chunks. As is, this has some small chunks, but it’s best for cereal or on yogurt/ice cream.
